You are going to need:
Four, 5 ounce ramekins
½ cup of tomato sauce
4 eggs
¼ cup of grated Parmigiano-Reggiano cheese
1 tablespoon of freshly chopped parsley
Sea salt and pepper to taste
Instructions:
Heat your oven to 250 degrees
Separate two tablespoons of tomato sauce into each ramekin as well as a pinch of parsley
Break one egg into each ramekin on top of the tomato sauce
Pop into the oven and bake for 12 minutes or until eggs are set
Sprinkle the last bit of parsley, sea salt, and pepper on top
Top the dish off with cheese and enjoy!
