Next in our Alberta Winery series is Spirit Hills. A meadery, Spirit Hills was the vision of the owners, Ilse and Hugo and the outcome of years of resolute, closer to earth sustainable lifestyle. In 2012, they set things in motion and since then, with creativity, fervor and hard work, Ilse and Hugo’s expectations are surpassed. Spirit Hills Winery is thriving, with its products enjoyed in Alberta and Saskatchewan and even as far as Japan!
Honey of various flavours used in creating the wines at Spirit Hills are from nectars of wildflowers in the Rocky Mountain Foothills - flora neither touched by pesticides, herbicide or fertilizers nor genetically modified.

As winemakers we like to think of ourselves as yeast farmers, wine alchemists, who create the right environment for the yeast to thrive in and joyfully create a drink we can all enjoy.”

SaskwatchPairs well with red meats, spicy cuisine such as Mexican, East Indian or Thai and is also great with cheese. It is a dry wine with notes of spiced dark chocolate and ends with smoky oak. It is made with Saskatoon berries native to Alberta and black currants
DandePairs well with white meats, seafood, mushrooms, root vegetables and with Asian cuisine, particularly dishes with curry or peanut sauce. It is medium-dry, best served chilled. Made with dandelion, it smells of wildflowers.
Wild RosyPairs well with desserts, strong cheeses, such as blue or aged cheddar, as well as Japanese and spicy Asian cuisines. It is semi-sweet with a subtle rose flavour. Its name bears its flavouring ingredient, Alberta’s wild rose.
**YeeHaa!**Pairs well with BBQ fare. It is “Alberta’s Sangria”, which is fruity, soft in sweetness and ends with notes of apples, berries and cinnamon. It is made with black currants, Saskatoon berries, apples and a touch of cinnamon.
BonfireGreat on its own as winter warmer-upper and summer night bonfire drink. It has berry notes with a smooth finish, best served warm. It is made with black currants, Saskatoon berries, cinnamon and cloves.
