Alberta Potato Pancakes

2 ½ cups grated potato3 large eggs2 tablespoons flour1½ teaspoons salt½ teaspoon nutmeg1 teaspoon pepper2 tablespoons grated onionCanola oil

Place grated potato in a colander or sieve and squeeze out as much water as possible then put in a medium-sized mixing bowl.

Add to the mixing bowl the eggs, flour, salt, nutmeg, pepper and grated onion and stir well.

Heat canola oil, about a quarter-inch, deep in sauté pan.  Add scoops of potato mixture to the pan and flatten to about 3 inches across.  Flip pancakes when brown and remember oil should not smoke.

Place cooked pancakes on paper towel briefly to remove excess oil.  Serve with apple sauce.

Makes approx 4-6 pancakes
