Apple Cobbler
430 grams apples, peeled & chopped
3 tablespoons (or to taste) stevia
2 cups almond flour
2 teaspoons cinnamon
1 tablespoon baking powder
9 large eggs
1 cup melted margarine or healthy oil of your choice.
1 teaspoon vanilla
Preheat the oven to convection bake 350ºF.
Add the stevia to the chopped apples and mix thoroughly. In a bowl, mix the almond flour, cinnamon, and baking powder together.
In a separate bowl, whisk the eggs. Stir in the melted margarine or oil and vanilla. Add this to the flour mix and stir until incorporated.
Add the apple to the batter and mix thoroughly. Pour into a greased 9” X 13” pan. Bake in preheated oven for approximately 40 minutes. Transfer to a cooling rack. The cobbler will pull away from the edges of the pan when it is ready.
Note: Stevia to taste, depending on how sweet the apples are.
