Apple, Pear and Blueberry Crumble

<p>Summers bring many wonderful fresh fruits to our local grocers (and to our backyards or patios). What to do with this abundance? One of our favourites is a berry crumble. A crumble is very forgiving and a delicious way to use up fruits. You can use different combinations of fruit for your own unique twist.<span id="more-429"></span><br> <p>Apple, Pear and Blueberry Crumble</p> <ul> <li>2 tart apples, peeled, cored, and cut into bite-size chunks</li> <li>2 soft pears, peeled, cored, and cut into bite-size chunks</li> <li>2 cups washed blueberries</li> <li>½ teaspoon EACH orange and lemon zest</li> <li>Juice of 1/2 lemon</li> <li>Juice of 1/4 orange</li> <li>½ cup white sugar</li> <li>2 tablespoons flour</li> <li>½ teaspoon cinnamon</li> <li>¼ – ½ teaspoon freshly grated nutmeg</li> </ul> <p>Topping:</p> <ul> <li>3/4 cup flour</li> <li>½ cup brown sugar</li> <li>¼ teaspoon kosher salt</li> <li>3/4 cup chopped pecans</li> <li>½ cup old fashioned oatmeal</li> <li>¼ cup cold butter, sliced into 8 equal pieces</li> </ul> <p>Preheat oven to 350°F Convection Bake*.</p> <p>Combine all fruit ingredients together in a large bowl; set aside.</p> <p>Combine topping ingredients in a large bowl, cutting the butter in with a pastry cutter or two butter knives.</p> <p>Place fruit into a large square or rectangular baking dish and top with topping. Bake for 45 minutes to 1 hour, or until the top is nicely browned and fruit is bubbly. Serve warm with a good vanilla ice cream.<br>*If you don’t have a convection oven, preheat oven to 350°F and start checking your crumble at 45 minutes.</p>
