Regular Bake
4 medium bananas mashed4 tablespoon coconut oil1 tablespoon molasses*1 tablespoon fresh vanilla bean1 cup nondairy milk11/2 cups coconut sugar1 teaspoon cinnamon½ teaspoon salt2 cups flour2 teaspoons baking powder½ teaspoon baking soda1 cup Turkish dates, diced½ cup walnuts
Pre-heat oven to 350F on convection bake.
Grease 8 muffin pans, line with muffin cups. In a large bowl add all dry ingredients together.
In another bowl mix all wet ingredients together. Pour the wet into the dry mix, do not over mix, fold in walnuts and dates. Spoon mixture into muffin tins evenly, bake for 25-30 minutes.
**Banana rum caramel flambé sauce:**1/3 cup sugar2-3 bananas, sliced1/3 cup dark rum1 cup whipping cream1 tablespoon vanilla bean
Caramelize sugar in a pan. Add banana slices and sauté 3-5 minutes. Deglaze with rum and flambé. Add cream and vanilla bean and simmer until sauce is thickened.
Serve with fresh berries (optional)
*****Vanilla is scraped from inside the bean. One bean yields approximately one tablespoon.
