A great go-with for coleslaw, onion rings, yam fries, veggies, etc. and not to forget, your choice of beverage.
**Ingredients:**4 pieces of 4oz cod loin*Oil for deep-frying
Dredge: 1 cup flour1 tablespoon paprika1 tablespoon onion powder1 teaspoon black pepper
**Batter:**1 355ml can dark beer1 ½ cups flour½ cup cornstarch1 tablespoon baking powder1 egg white, beaten medium
**Method:**Preheat deep fryer to 325 degrees Fahrenheit.
Prepare dredge by mixing all ingredients in a medium-sized mixing bowl.
Pour beer into another medium-sized mixing bowl. In a separate bowl, mix flour, cornstarch, and baking powder. Whisk into beer Gently fold in beaten egg white into the batter.
Ensure fish is patted dry with paper towel. Lighty dredge each piece in flour mixture, then gently dip in batter with tongs. Carefully lower the battered fish into the hot oil, and cook until internal temperature reaches 165F (approximately 5 minutes per side).
Remove to paper towel or raised grate to drain excess oil and serve hot!
