1½ pounds medium ground beef2 teaspoons salt2 teaspoons pepper3 ounces spreadable cream cheese3 ounces crumbled blue cheese1 tablespoon Keens mustard
Preheat barbecue to medium heat.
Mix together ground beef, salt and pepper. Divide into 8 equal portions and flatten burgers to about ¼ inch thick. Use a 6” dessert plate to flatten.
In a separate bowl mix the cream cheese, blue cheese and Keen's mustard. Place 2 tablespoons of the cheese mixture on top of 4 of the patties. Place a second patty over top of the cheese and press the edges together.
Cook burgers on the barbecue over medium heat, approximately 8 minutes each side.
Dress fresh buns with your favourite toppings and enjoy.
