Have you gotten back from your latest summer adventure and realized it’s suddenly mid-August? Time to start sneaking in a few more barbeques amongst all the back-to-school preparations. Sure to please everyone coming to dinner, these decadent Blue Cheese Burgers are just what you need to distract your family and friends from the imminent demise of summer vacation (or to celebrate the kids returning to school – we don’t judge).

Blue Cheese Burgers
1 ½ pounds medium ground beef
2 teaspoons salt
2 teaspoons pepper
3 ounces spreadable cream cheese
3 ounces crumbled blue cheese
1 tablespoon Keens mustard
Mix together ground beef, salt and pepper.
Divide into 8 equal portions and flatten burgers to about a ¼ inch thick. You can use a 6” dessert plate to flatten.
In a separate bowl mix the cream cheese, blue cheese and Keens mustard.
Place 2 tablespoons of the cheese mixture on top of 4 of the patties.
Place a second patty over top of the cheese, and press the edges together. Cook burgers on barbecue over medium heat, approximately 8 minutes each side.
Dress fresh buns with your favourite toppings, and enjoy.
Makes 4 burgers or 8 patties
