Candice beat out over 100+ other applicants to be one of four finalists in our Favourite Family Recipe Contest with Global News Morning. During November, we invited each finalist to the Live Kitchen in our Richmond showroom to share their history-rich recipes with us. You can now recreate Candice's Norwegian Christmas bread recipe at home.
The story behind this recipe:
"Here is a picture of my family’s favourite recipe; it is for a type of Norwegian Christmas bread that had been made by generations of my family. Growing up, we would all gather at my Grandma’s house to kneed the dough and sit sipping hot chocolate and watching movies while it rose. It is one of the few things we all shared that still connected us to our ancestry. Everyone would bring home a finished loaf and savour every warm, cardamom-scented slice. It does not winter in our family until the yulekake has been made."
The original recipe typed by Candice's grandmother.
Ingredients:
2 cakes compressed yeast
½ cup lukewarm water
3 cups milk, scalded
½ cup butter
1 cup sugar
½ cup chopped citron
2 eggs, beaten
2 tsp salt
½ cup candied cherries
½ tsp crushed cardamom
2 cups raisins
10-11 cups flour
Directions:
Dissolve traditional yeast in water.
Heat milk over medium until hot.
Melt the butter in a large mixing bowl with the heated milk.
Stir the buttermilk mixture until lukewarm.
Add yeast, sugar, salt and half of the flour.
With an electric mixer, mix well for 10 minutes.
Add eggs in one at a time.
Beat thoroughly before adding additional ingredients.
Add fruits, cardamom and enough flour to make a soft dough.
Knead and let the dough rise.
Shape the dough into 5 rough loaves and place into a greased pan.
Let the dough rise for 1 hour or until light.
Brush the top with an egg yolk and milk mixture.
Bake at 375°F for 45-50 minutes.
Remove from oven and brush with melted butter.
Sprinkle with sugar and cinnamon to serve.
