1 litre (4 cups) brewed coffee, refrigerated1 litre (4 cups) ice cubes, small¼ cup white sugar3 tablespoons coffee creamer (18%)3 tablespoons vanilla extract
While the coffee is still warm, flavour it with the cream, sugar and vanilla, then put it in the refrigerator until cooled.
In a large blender, add small ice cubes, then the coffee mixture, and purée on high speed until smooth. Top with choice of whipping cream, and serve immediately. The mixture will hold up to two hours in the fridge before the ice melts too much.
An immersion blender also works well to puree the ice and coffee, but be certain to use a container deep enough to avoid spilling during the mixing process.
