IngredientsYield 6-8 pancakes
7 strawberries, cut thinly1 ¼ cup AP flour¼ cup dark cocoa powder, unsweetened3 tablespoons white sugarPinch salt2 eggs1 ¼ cup buttermilk½ teaspoon vanilla¼ cup of chocolate chips1 teaspoon butter
Place cut strawberries in a small pan over low heat and macerate until softened. Set aside.
Sift together flour, cocoa, salt and sugar in a large bowl.
In a second large bowl, mix egg, buttermilk, and vanilla.
Add the flour mixture into the buttermilk mixture and whisk until smooth. Add in chocolate chips, and let stand one hour
Brown 1 teaspoon of butter in a frying pan over medium-high heat, and add pancake batter ¼ cup at a time. Allow cakes to cook until the surface bubbles have all opened. Flip, and cook until cakes are firm to the touch.
Remove from pan, top with macerated strawberries and fresh whipped cream.
