Need something different for your dinner? Try this flavourful soup recipe from Chef Lantz at Trail Alberta. Tart apples are cooked with cream and curry to produce a wonderful soup for your senses. Pair it with a side salad or a crusty bun for a delicious meal!
Curried Apple Soup Recipe
¼ cup butter
1 medium onion, chopped
3 McIntosh apples, cored and chopped into bite-sized pieces
1 tablespoon curry powder
1 teaspoon salt
½ teaspoon pepper
1 cup cream
2 cups chicken broth*
Plain yogurt (plain Greek yogurt would work as well)
Fresh chopped cilantro
In a medium-size pot cook the butter and onions until onions are soft. Add apples, curry, salt and pepper and sauté until apples are soft. Add cream and chicken broth. Bring to a boil then simmer for 30 minutes. Serve with a dollop of yogurt and cilantro.
Makes approx. 6 servings
*substitute vegetable broth to make the soup vegetarian
