If you’re in need of something easy but spectacular to serve for dinner, this is the recipe for you. Add a salad for a complete meal.
Eggnog Pie

Here is something novel to try this holiday season. Start by baking a 9 inch pie shell, ready bought or home made.

Eggnog Pie ingredients:

2 teaspoons gelatin½ cup sugar2 tablespoons corn starch¼ teaspoon salt1 cup eggnog3 egg yolks1½ teaspoon vanilla¼ teaspoon almond flavouring1 cup whipping creamSugar, to tasteCinnamon & nutmeg for garnsh

In a thick bottom pot mix together gelatin, sugar, corn starch and salt. Add eggnog and mix well. Heat over medium heat, stirring constantly.

When mixture boils remove from heat pour in bowl and cool in fridge.

In a separate bowl mix egg yolks, vanilla and almond flavouring. Add to cooled custard slowly, making sure eggs don’t cook.

Mix the whipping cream to a stiff consistency adding sugar to taste. Fold whipped cream into the rest of the filling and spoon into pie shell

Sprinkle with cinnamon and nutmeg before serving.
