If you are thinking about doing roasted ham as part of your Easter meal, here is a great recipe that will be sure to have you coming back for seconds!
Ingredients:
1 smoked ham with the rind on, preferably the shank
1 cup apple cider or juice
1 cup crushed pineapple & juice
½ cup whole-grain Dijon mustard
½ cup maple syrup
½ cup brown sugar
8 whole cloves
Method:
Preheat oven on convection bake to to 325F.
Place ham in a large roasting pan, pour apple juice, crushed pineapple and juice over ham, cover completely with parchment paper, then cover with heavy-duty aluminum foil, sealing tightly at edges of the pan. Bake for two to three hours until internal temperature reaches 150F, remove from oven. Increase oven temperature to 375F.
Drain the liquids from the pan, cut off the rind and all but ¼ inch thick layer of fat from the ham and discard. Using a long sharp knife, score fat in 1-inch wide, ¼-inch deep diamond pattern. Coat the fat layer of ham with mustard and drizzle with maple syrup, next coat with brown sugar and poke the cloves into ham randomly.
Place ham back in the oven, uncovered for 30-40 minutes, until nicely glazed. Transfer ham to serving platter, let sit at least 30 minutes, slice and serve.
