6 crunchy taco shells, parbaked2 pc 6oz chicken breast2 pc ripe avocado, sliced thinly1 roma tomato, diced1 tablespoon lemon juice½ cup sharp cheddar cheese, grated
Begin preparation by grilling the chicken on a barbecue grill, pan-frying it, or searing it and finishing it in the oven. While the chicken is cooking, you have time to prepare the remaining ingredients. That way, you can assemble and eat the tacos as the chicken is still fresh from the oven or grill.
While chicken is cooking, peel, pit, and slice avocado into thin strips and place in a small bowl. Dice the tomatoes and place them in another bowl of their own, as well as the shredded cheese. This makes for faster assembly when the chicken is ready.
Once the chicken is finished, warm up the taco shells in the oven while cutting the chicken into thin strips. Season the chicken with lemon juice, salt, and pepper, then place it in a small bowl.
Once the shells are crisped, place a layer of chicken at the bottom of the taco, then a layer of tomato, a layer of avocado, and top with shredded cheddar. Serve hot with spicy salsa or sour cream.
