Some of you may sigh thinking ‘oh gosh, kale again!’ It seems like kale has assumed control over our blue planet. In salads, soups, shakes, juices, wraps… Kale is everywhere! You may not find it as the number 1 choice of green addition to your plate or you may not want to battle against the younger demographics around the dinner table but that’s because you have not had kale chips! Crunchy, salty, and oh-so-good-for-you kale chips!
Give it a try:1 bunch kale1 tablespoon of oil – olive/melted coconut oilSalt to taste (about ¼-½ tsp)
Wash the kale leaves thoroughly. Remove leaves from the main stem. Discard the stem. Dry leaves completely. Skipping that part may result in soggy, less crunch chips.
Tear leaves into bite-size pieces. Place leaves in a bowl and drizzle the oil. Add the salt. Massage leaves to have them all covered with the oil. Don’t be tempted to add more oil.
Place in a single layer on a cookie sheet covered with parchment paper. Place in a pre-heated oven to 300 degrees and bake for about 25 minutes. Do not over bake as the chips may become bitter.
Let cool for 5 minutes and serve.
