Ingredients for Jalapeno Cornbread Muffins
½ cup flour2 tablespoons cornmeal1 teaspoon baking powder¼ teaspoon garlic salt½ cup milk1 egg1 tablespoon jalapeno, diced
Method
Preheat oven to 375° on convection bake.
Mix all ingredients in a large bowl. Portion out the mixture into 6 large muffin cups. And bake for 15 minutes.
Stack the eggs benedict from bottom to top: half muffin, bacon, poached egg and top with nacho cheese. Place on a cookie sheet.
Switch oven to convection broil and put the cookie sheet in for approximately 2 minutes.
Makes 12 eggs benedict
