Here are some yummy treats you can serve Sunday morning. Compliments of Chef Sue at our Red Deer store.
Lemon Cheesecake Pancakes
8 ounces cream cheese, softened2 eggs, beaten5 teaspoons all-purpose flour1½ teaspoons white sugar2 teaspoons butter, melted & dividedConfectioners sugar for dusting1 teaspoon lemon juice½ lemon, cut into wedges
Beat the cream cheese together with the eggs in a bowl until the mixture is almost smooth. Stir in the flour, sugar and 1 teaspoon of melted butter to make a batter.
Heat remaining 1 teaspoon of butter on a griddle or in a heavy frying pan over medium heat. Drop the batter onto the griddle in silver dollar-sized dollops and cook until lightly golden brown, about 3 minutes. Turn the pancakes over and cook an additional 2 minutes.
To serve, sprinkle with confectioners sugar and drizzle with lemon juice. Serve with lemon wedges.
Lemongrass Mint Lime Spritzer
2 stalks of Lemongrass1 cup of water1 cup of sugar1 cup fresh mint, roughly choppedSparkling waterLime slices & mint to garnish
Trim the tops and bottoms off of the lemongrass and remove the tough outer leaves until you reach the pale interior.
Chop into 2-inch pieces using a rolling pin or whatever heavy blunt object you have handy. Add the water, sugar and lemongrass to a small saucepan. Bring to a boil over medium heat then remove from the heat. Add the mint leaves and let them steep for 15 minutes. Strain out the mint and lemongrass. Cool and store in an airtight jar until needed.
To make the spritzer, place some ice in a glass and add a tablespoon or two of syrup, to taste. Top with sparkling water, lime slices and mint leaves to garnish. Of course, if you’d like to indulge a bit, feel free to top this off with a splash (or two) of gin and reduce the sparkling water.
Strawberry Banana Smoothie
2 cups frozen Strawberries1 fresh banana, peeled1 cup milk (almond milk, if preferred)1 cup ice1 tablespoon honey, if needed to sweeten
Add all ingredients to a blender and pulse until combined. Serve immediately. If the smoothie is too thick, add more milk. If it is too thin, add more fruit and/or ice.
