Ingredients you'll need for the mashed potatoes
4 medium-sized Yukon Gold potatoes
1/2 cup heavy cream
6 tbsp grass-fed butter, unsalted
1 tablespoon of finely chopped chives
2 sprigs of thyme
2 cloves of garlic
Salt and pepper to taste
Step-by-step guide to making creamy pomme puree
Place the potatoes in a pot and cover with water. Add kosher salt (1 tablespoon per litre), thyme, and garlic cloves.
Bring the water to a boil, then reduce the heat to a simmer. Cook until the potatoes are tender and can be easily pierced with a knife. This should take about 40-50 minutes.
While the potatoes are cooking, bring the cream to a simmer in a separate pot. Set it aside.
Once the potatoes are cooked, drain them through a colander and discard the water. While the potatoes are still warm, peel the skin off.
Mill the peeled potatoes through a potato ricer into a pan. Add in the butter and turn on the heat to medium-low. This will help incorporate the butter into the potatoes and remove some moisture.
Slowly add in the warm cream, stirring until fully combined.
Pass the warm potato mixture through a fine strainer to remove any small lumps. This will ensure your mashed potatoes are silky smooth!
