You won’t regret it.</p> <p><strong>Potato Pancakes</strong></p> <ul> <li>2 ½ cups grated potatoes (Russets or Idaho are best)</li> <li>3 large eggs</li> <li>2 tablespoons flour</li> <li>1 ½ teaspoons salt</li> <li>½ teaspoon nutmeg</li> <li>1 teaspoon pepper</li> <li>2 tablespoons grated onion</li> <li>Canola oil for frying</li> <li>Crab Apple Sauce for serving (recipe below)</li> </ul> <p>Place grated potato in a colander or sieve and squeeze out as much water as possible before putting in a medium-sized mixing bowl. Add the eggs, flour, salt, nutmeg, pepper and grated onion to the mixing bowl and mix everything together.</p> <p>Heat canola oil, about a quarter inch deep, in sauté pan. Add scoops of potato mixture to pan and flatten to about 3 inches across. Flip pancakes when brown and remember oil should not smoke.</p> <p>Place cooked pancakes on paper towel briefly to remove excess oil. Serve with crab apple sauce.</p> <p>Makes approximately 23 three-inch pancakes</p> <p><strong>Crab Apple Sauce </strong></p> <p>A simple, quick sauce accompaniment for a variety of dishes!</p> <p>Peel and core some large crab apples. Chop and place in sauce pan with a quarter inch deep water and simmer to desired consistency. Taste and add appropriate amount of your choice of sweetener (sugar, honey etc.), vanilla and/or cinnamon.</p> <p>Serve with potato pancakes. Would also go well with a roast pork.</p>
