The Farm Burger

The first day of summer is right around the corner, but barbecue season has already started for most of us. Not that we need a special event to break out the grill; but with Father’s Day almost here and Canada Day coming up, why not try your hand at something homemade for your next big BBQ to make it truly special?
The Farm Burger
Yield: 8 burgers

1 lb lean ground chicken

0.75 lb ground pork

¾ cup panko bread crumbs

1 egg, lightly beaten

1 tablespoon Worcestershire sauce

2 tablespoon olive oil

1 glug or two of Franks Red Hot sauce

1 five-finger pinch of finely chopped fresh cilantro and basil

2 cloves garlic, minced

1 package goat cheese (any flavour, but cranberry works well with the recipe)

1 handful of bacon (fried, crumbled bacon is always preferred but packaged Real Bacon Bits work as well)

Equal parts hot mustard and barbecue sauce

2 bottles of beer

1 red onion (sliced to rings)

1 hunk of butter

1 glug of balsamic vinegar

Preheat barbecue.

Combine chicken and pork in a large mixing bowl until well mixed.

Mix in the next 7 ingredients (bread crumbs, egg, Worcestershire sauce, oil, hot sauce, herbs and garlic).

Using your hand, form into 8 evenly sized balls and press into patties.

Wash your hands, and in another bowl, mix goat cheese and bacon. Set aside.

Mix mustard and barbecue sauce in a small bowl. Set aside.

Open bottles of beer and drink leisurely.

In a large frying pan, add the hunk of butter and then the red onions, turning down to medium-high heat. Cook until onions start to caramelize and then add a glug of balsamic vinegar. If your heat is too low, everything gets gooey.
* Important: this can be done ahead of time and then heated up just before burgers are ready; otherwise start this procedure at the very beginning.

Transfer burgers to the hot grill, turn down to medium high and cook roughly 6-8 minutes per side (depending on thickness, barbecue temp, etc.). Once burgers have been flipped, add some buttered buns to grill until warm and slightly charred.

Transfer burger to bun, add toppings (goat cheese mix, onion, and mustard/barbecue sauce) and enjoy.
