3 strips bacon, cooked & diced2 stalks green onion, chopped1 small tomato, diced¼ cup cheddar cheese, grated3 eggs, large¼ cup whipping creamSalt & pepper to taste24 mini tart Shells
Preheat oven to 390F on convection bake.
Prepare bacon, green onion, and tomato, and set aside.
Whip together the eggs and cream until totally combined. Add in the bacon, green onion, tomato, and salt and pepper. Mix thoroughly.
Spoon mixture into mini tart shells, top with cheddar and bake for 11-13 minutes.
Remove to wire rack and cool slightly before serving.
